| Job Description |
The Sous Chef will be expected to run the kitchen operation together with the Head Chef and manage a small team of 5 chefs.
As a Sous Chef you will be responsible for supervision of all the mise en place, smooth running of sections and the pass.
The Sous Chef must demonstrate good staff management and team building skills, be flexible and motivated to maintain high food standards under pressure.

SOUS CHEF BACKGROUND
previous experience working in quality kitchens using fresh seasonal produce Able to train and motivate a small team of chefs to cook to high food standards hands on for all sections, lead by example Capable of following all statutory kitchen procedures (stock control, ordering, rotas, health and safety). Work with head chef on new menus and daily specials Proactive, focused and well organised Working knowledge of costings and budgetary control

The a la carte menu is based mainly on freshly cooked well executed modern European dishes, a lot of meat, seafood and fish dishes all sourced from good local suppliers. You will be involved with menu input and creating new dishes.
